CAJUN RICE

CAJUN RICE





A seasoned and spicy rice preparation with kidney beans.

Preparation Time : 20 minutes

Cooking Time : 20-30 minutes


Ingredients


Rice, cooked 2 cups
Red kidney beans (rajma) soaked, boiled and drained 1/2 cup
Oil 2 tablespoons
Onion , chopped 1 large
Tomatoes, chopped 2 medium
Green capsicum, chopped 1 medium
Salt to taste
Lemon juice 1 tablespoon
FOR CAJUN SPICE MIX
Red chilli powder 1 teaspoon
Crushed red chillies 1 teaspoon
Mixed herbs , dried 2 teaspoons

Method

Mix together all the ingredients for the Cajun spice mix.Heat the oil in a deep pan; add the onion and sauté till translucent. Add the tomatoes and capsicum and sauté for two minutes. Add the Cajun spice mix and boiled kidney beans and mix well. Stir in the rice, salt and lemon juice. Cook till the rice is heated through. Serve hot.
